Taco Night (Noche de Tacos)

Ingredients

  • Black or Kidney or Navy Beans
  • Gluten-free tacos (organic corn tacos)
  • Lettuce wraps (Bibb lettuce)
  • Avocado
  • Purple cabbage
  • Pickled ginger
  • Half-sour pickles
  • Onions
  • Greek yogurt (plain) as sour cream
  • Protein of choice
  • Salsa or pico de gallo

I mean, use your cabeza, folks. Assemble these ingredients as desired. Pickled ginger/pickled vegetables in general BELONG in your TACOS, trust me. Wherever you can get more probiotics (pickled foods = probiotics), go wild. Mo’ probiotics, less problems.
