Michele’s Vegetable Medley


I try to keep something like this in my fridge at all time so I just heat it up and add a protein.


  • 1 cup chopped eggplant
  • 1 cup chopped zucchini (or yellow squash)
  • 1 medium sized chopped tomato
  • ½ cup lentils (or legume of choice)
  • 1-2 cups low sodium chicken broth
  • Salt + pepper  to taste
  • Oregano & basil

Put everything in a pot bring to a boil, reduce to simmer and cover. 1 hour later voila!

I will serve this as a side, on top of pasta or toss in chopped protein of choice and have a chucky “soup”.
