AvocadoYAY Toast

  • 1, thick-cut, (1 inch) slice of 100% whole grain bread fresh from a bakery or Whole Foods
  • ½ avocado
  • red pepper flakes
  • lemon
  • 2 tsp chia seeds
  • cayenne pepper
  • Optional: 1 poached organic, omega-3 egg or smoked wild salmon for topping

 
Directions:

  1. Mash avocado in a bowl with the juice of ½ lemon and and chia seeds
  2. Layer avocado on toasted bread.
  3. Top with cayenne pepper to taste and red pepper flakes to taste.
  4. Serve with a poached egg or smoked wild salmon on top.
