Gluten-Free + Dairy-Free Banana Bread

You’ll Need:

  • Almond flour (“Bob’s Red Mill”), 2.5 cups
  • Cinnamon, 1.5-2 tsp
  • Nutmeg, ¼ tsp
  • Baking soda, 1 tsp
  • Salt, ½ tsp
  • Very ripe bananas, 3 whole
  • Eggs, 3
  • Unsweetened hemp milk ¼ cup OR Yogurt, ½ cup [if not dairy-free]
  • Vanilla extract, 1 tsp

Optionals:

  • Dark chocolate chips, about 6-7 tbsp [vegan dark chocolate chips]
  • Chopped walnuts, 1/3 cup

Directions: 

  • Mix wet ingredients
  • Mix dry ingredients
  • Coat Large loaf pan with coconut oil
  • Slowly combine wet and dry, pour into Large loaf pan.
  • Bake at 350 degrees for 55 minutes​
